The delicious oat risotto is made with Fazer Willja Oat Rice and served with Fazer Willja Veggie Bites. The dairy-free and vegan oat risotto is suitable for many tastes!
Preheat the oven to 180 C and line a baking sheet with parchment paper.
Clean and chop the mushrooms. Dice the onions and garlic. Cook the mushrooms on a hot dry pan until most of the liquid has evaporated. Lower the heat, add the oil and diced onion and garlic and cook them for a few minutes. Add butter and Fazer Willja Oat rice to the pan and stir for about a minute on medium heat. Pour the vegetable broth to the pan little by little and let simmer on medium heat for 10 minutes.
Place the Fazer Willja Veggie Bites on the baking sheet lined with parchment paper and cook for 10 minutes.
When the vegetable broth and Fazer Willja Oat rice has simmered for about 10 minutes, add the white wine, Fazer Willja Oat for Cooking and dried thyme. Let bubble away for another 5 minutes or until most of the liquid is absorbed into the Oat rice. The Oat rice can have a little bite to it, like risotto rice. Taste and add salt and pepper if needed.
Serve the oat risotto with the warm Fazer Willja Veggie Bites and green salad.
