Tasty vegetarian burritos get a delicious filling made from Fazer Willja Oat Rice, avocados, beans, fried greens and other delicacies. These are perfect for lunch or parties!

Ingredients
300Ml Fazer Willja Oat Rice
1 handful fresh coriander (or parsley)
1 lime (organic – juice and zest)
3 red onions
2 peppers
1 tin black beans
2 tsp ground cumin
1 teaspoon paprika
½ teaspoon smoked paprika
½ tsp ground cinnamon
1 handful grated cheese (I use mature cheddar and grate it coarsely)
2 avocados
4 tortilla pancakes (large)
salt and pepper
olive oil
Instructions
Cook the oat rice according to the instructions on the package.
Peel the onions and cut them into thin slices. Peel and de-core the peppers and cut them into long, thin strips.
Heat a pan with a few tablespoons of oil, 1 teaspoon of salt and the spices. Fry the onions and peppers over a medium heat for 10 minutes until soft.
Drain the beans, rinse them and add them to the pan. Heat for a minute or two.
While the rice is cooking and the vegetables are frying, you can make guacamole: peel the avocados, remove the stone and scrape out the flesh. Roughly mash the flesh with a fork in a bowl. Season with lime juice and salt.
When the rice is ready (I always let it sit with the lid on and away from the heat for 5 minutes), add the finely grated lime zest and the finely chopped coriander.
Make up your burrito with guacamole, rice, fried greens and beans and grated cheese. Roll it up and eat.
