This warm chickpea stew is a great everyday food. The tasty vegetarian recipe is quick to make and keeps hunger away for a long time. The stez is made with the nutritious and protein-rich Fazer Willja Oat Rice.
1 red onion
1 sliced red pepper
2 spoonfuls of red curry paste
300ml coconut milk
1 packet of cherry tomatoes, sliced
200ml Fazer Willja Oat Rice
1 tin chickpeas
1 bunch spring onions
Coriander for topping
Sweat the red onion and peppers in oil for 3 min.
Add the coconut milk, curry paste, tomatoes and oat rice
Cook for 10 min. until the sauce thickens.
Add the chickpeas and cook for 3 minutes until the oat rice is cooked through.
Top the dish with spring onions, coriander, pan-fried oat rice.
