Toppings for soups
Fazer Willja Oat for Cooking brings creaminess to differents soups and there is many ways to add some nutrition to these. Try these toppings such as roasted chickpeas, spiced lentils and herb spiced Fazer Willja Oat Rice to bring more flavor and spice to your soup.
Ingredients
Roasted chickpeas
- ~200 g pre cooked ready-to-use chickpeas
- olive oil and salt
- 1 tsp curry powder
- 1 tsp onion powder
- 1 tsp mild paprika powder (sweet paprika)
- more salt if needed
Spiced lentils
- ~200 g pre-cooked ready-to-use red lentils
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 2 tsp cumin
- 1 tsp dried oregano
- ½ tsp salt or to taste
Herb spiced Fazer Willja Oat Rice
- 2 dl Fazer Willja Oat Rice
- ½ vegetable broth cube
- a handful of chopped fresh herbs such as cilantro or basil
- 2 tbsp olive oil
- sprinkle of salt
- lemon juice
Instructions
Roasted chickpeas
- Preheat the oven to 200 C and cover a baking sheet with parchment paper.
- Rinse, drain and dry the chickpeas well. You can dry the chickpeas in between a kitchen cloth or paper towel. The drier they are, the crispier they will become when roasted.
- Spread the dried chickpeas on the parchment paper, drizzle oil and sprinkle salt on top. Roast the chickpeas in the oven for 15 minutes or until they are crispy and golden.
- Combine the spices in a bowl and coat the roasted (warm) chickpeas with the spice mix. Let the chickpeas cool on the baking sheet and use as a topping with soup.
Spiced lentils
- Rinse and drain the lentils well. Mix them together with the oil, lemon juice and spices. Let the mixture set in the refrigerator for at least 30 minutes before serving. Use the spiced lentils as a topping for soup.
Herb spiced Fazer Willja Oat Rice
- Cook the Fazer Willja Oat Rice according to instructions, but add half a vegetable broth cube instead of salt.
- Mix the cooked Oat Rice with chopped herbs and olive oil. Add salt and lemon juice to taste.
