This summer salad is the perfect accompaniment to a summer barbecue. A fresh salad made from Fazer Willja Oat Rice and stuffed with cherry tomatoes, asparagus and broccoli.
260ml Fazer Willja Oat Rice
400 ml water
1 bunch of asparagus
1 packet of broccoli
12 cherry tomatoes, halved
1 packet of sugar snap peas
100ml olive oil
1 tsp lemon zest
Salt and pepper
Cook the oat rice according to the instructions on the package. Then let the oat rice cool.
Boil the water in a large saucepan. Add the asparagus, broccoli and salt. Cook for 1 minute. Cool in cold water and dry the vegetables well.
Slice the cherry tomatoes, asparagus and sugar snap peas.
Combine the cooled oat rice, the asparagus, broccoli, sugar snap peas and cherry tomatoes in a bowl. Add the olive oil, lemon zest, salt and pepper. Stir everything together.
