Quesadillas
@gadtoft Veggie quesadillas! Who doesn’t go mad over crispy tortillas stuffed with delicious and juicy goodness? These tasty things are filled with arugula, guacamole and Fazer Willja Oat Rice. Talk about a perfect summer lunch!
Ingredients
Guacamole
- 2 ripe avocados
- ½ chopped red onion
- ½ bunch of fresh coriander
- juice of ½ lime
- salt and freshly ground pepper
Spicy filling
- rapeseed oil
- 2 cloves of garlic, finely chopped
- 1 finely chopped red chili
- 3 dl of pre-cooked Fazer Willja Oat Rice
- 1 bag of taco seasoning
- 1 dl water
You also need
- 6 tortillas
- 6 tablespoons of salsa
- 3 handfuls of arugula
- 100 g grated cheddar
- rapeseed oil
Instructions
- Puree avocado and coriander with lime juice and season with salt and freshly ground pepper. Add the red onion and put the guacamole in the fridge.
- Saute the garlic, chili, pre-cooked Oat Rice and taco seasoning in oil and add water to the pan after 2 minutes. Let the spicy filling cook for another 5 minutes and set it aside.
- Spread a thin layer of salsa on the tortillas and sprinkle with grated cheddar. Place 1/3 of the filling on another plate and sprinkle arugula on top. Place a tortilla spread with taco sauce as a cover. Fry the spicy quesadillas on a hot pan (3-4 minutes on each side) and let them cool for 5 minutes. Serve the crunchy treats with homemade guacamole.
