This delicious and fresh pesto-oat salad is suitable for both lunch and as a side dish. The salad is made from the nutritious Fazer Willja Oat Rice and has a delicious taste of pesto. Try this simple vegan recipe!
260ml Fazer Willja Oat Rice
1 bunch green asparagus
12 cherry tomatoes
4 tablespoons olive oil
Salt and pepper
Cook the oat rice according to the instructions on the package. Then let the oat rice cool.
Boil the water in a large saucepan and add salt.
Add the asparagus and let it cook for 30 seconds.
Put the cherry tomatoes in a oven-proof dish and add olive oil, salt and pepper.
Bake the tomatoes in the oven at 200 degrees for approx. 10 minutes.
Mix the asparagus, pesto and the cooled oatmeal in a bowl. Add salt and pepper.
