Mushroom salad and savory pancakes
Fazer Willja Cooking Fraiche works well as a base for a salty mushroom salad and is also great in pancake batters! Try this delicious recipe.
Ingredients
- about 130-150 g salted mushrooms
- 1 small red onion
- 1 tbsp white wine vinegar
- 2 tbsp chopped parsley
- 1 package Fazer Willja Natural Cooking Fraiche
- ¼ tsp salt (or to taste)
- black pepper
Savory pancakes, about 20
- 1,5 dl chickpea flour
- 1,5 dl gluten-free oat flour
- 1 tsp baking powder
- 3/4 tsp salt
- 1 package Fazer Willja Natural Cooking Fraiche
- 2 dl + more if needed oat drink
- oil for cooking
Instructions
- Rinse and drain the salted mushrooms well. Chop the mushrooms and the onion and mix them together with the chopped parsley, white wine vinegar and Fazer Willja Cooking Fraiche. Add salt and black pepper to taste and let set in the refrigerator.
- In a bowl, mix together the flours, baking powder and salt. Add the Fazer Willja Cooking Fraiche and oat drink and mix until smooth.
- Scoop about 1,5-2 tbsp per pancake and cook them in a non-stick pan in medium heat for about 2 minutes per side. If the pancake batter becomes too stiff, add about 0,5 dl oat drink at a time and mix until smooth.
- Enjoy the savory pancakes with the salty mushroom salad.
