This mexican oat bean stew is a fresh but filling vegetarian food that you can easily make from Fazer Willja Oat Rice! This meal gets a lovely taste from fresh ingredients such as fresh chili, coriander and lime.

oil for frying
2 onions
3 clove garlic
1 red pepper
1 yellow pepper
5 large tomatoes
2 tsp cumin
1½ tsp smoked paprika
½ tsp cinnamon
4 tsp ground coriander
2 tsp dried oregano
500ml vegetable stock
1 tin peeled tomatoes
2 tbsp tomato purée
300 g Fazer Willja Oat Rice
1 tin of black beans
100g frozen sweetcorn
salt
1 lime
Instructions
Start by finely chopping the onions. Finely chop the garlic. Place into a bowl.
Cut the tomatoes into cubes. Remove the core of the peppers and cut the peppers into cubes. Place into a bowl.
Finely chop fresh coriander.
Put oil into a frying pan.
Add the onions and garlic. Cook until the onions are ready - but they must not turn brown.
Now add the dried spices and stir well.
Dissolve a stock cube in warm water. Now add the stock, the tomato purée and the tin of tomatoes. Stir well.
Now add the oat rice and let the dish cook for 10 minutes.
After 10 minutes, add the sweetcorn, tomatoes, peppers and fresh coriander. Rinse the beans thoroughly and add them to the pan.
Let the dish cook for another 5-10 minutes.
Add lime juice and season with salt.
Serve with sour cream, fresh coriander and avocado.
