This mexican-inspired pan with beans is made with the nutritious Fazer Willja Oat Rice! This colorful and tasty recipe that makes you want to bring it to the dining table again an again is completely vegan.

Ingredients
oil for frying
2 onions
3 cloves of garlic
1 red pepper
1 yellow pepper
5 large tomatoes
2 tbsp cumin
1-2 tsp of smoked paprika powder
½ tsp cinnamon
4 tsp crushed coriander
2 tsp dried oregano
5 dl of vegetable brine
1 jar of crushed tomatoes
2 tbsp tomato puree
300 g Fazer Willja Oat Rice
1 can of black beans
100 g corn (frozen)
salt
1 lime
Instructions
Start by chopping the onions and garlic in small pieces. Cut the tomatoes into cubes. Remove the kernels from the peppers and dice. Chop fresh coriander. Put everything in a bowl.
Pour oil into a frying pan and fry the onion and garlic. Let the onions cook until they are soft - don’t let them get brown.
Add the dry spices to the pan and mix well.
Dissolve the vegetable broth cube in warm water. Add the broth, tomato paste and crushed tomatoes to the pan and mix well.
Add Fazer Willja Oat Rice and cook for 10 minutes.
After 10 minutes, add the corn, chopped tomatoes, peppers and fresh coriander.
Rinse the beans thoroughly and add them to the pan. Let the food cook for another 5-10 minutes. Add lime juice and season with salt. Serve with creme fraiche , fresh coriander and avocado. Enjoy!
