This vegetable puree soup was called Green Power soup because it is full of - you might have guessed - green power! Boil broccoli and cauliflower and smooth over with Fazer Willja Oat for Cooking. The recipe is naturally dairy-free, vegan and also gluten-free. If you want even more protein and food for your soup, try making roasted chickpeas, seasoned lentils or herbs seasoned Fazer Willja Oat Rice.
Cook the diced onion in a saucepan in oil for a few minutes. Add the chopped broccoli and cauliflower, water and vegetable broth cubes. Bring to a boil and let simmer under a lid for about 15 minutes or until the vegetables are soft. The smaller the vegetable pieces are, the faster they cook.
Add the Fazer Willja Oat for Cooking to the soup and blend with an immersion blender until you have a smooth soup.
Serve the soup with the toppings. You can also drizzle some Fazer Willja Oat for Cooking on top of the soup right before serving.
