Enchiladas with plant mince and corn
@gadtoft Delicious vegetarian enchiladas stuffed with a lovely filling made with Fazer Willja Oat Rice, plant mince, corn and fajita spice mix. This dinner will surely make you will lick your plate clean!
Ingredients
Filling
- rapeseed oil
- 2 cloves finely chopped garlic
- 300 g plant mince
- 3 dl pre-cooked Fazer Willja Oat Rice
- fajita spice mix (30 g)
- 1 can corn (140 g)
- 1 dl water
You also need
- 8 tortilla wraps
- 500 g mild taco sauce
- 150 g grated mozzarella cheese
- 1 can corn (140 g)
- ½ bunch freshly chopped parsley

Saute the garlic, plant mince, pre-cooked Oat Rice and corn in rapeseed oil. Add the fajita spice mix and water. Let the filling fry for 5 minutes and set it aside.

Divide the filling into the cold tortilla wraps and roll them up. Place the rolled-up tortilla wraps with the closure facing down in a heatproof dish, and top with taco sauce, mozzarella cheese and corn. Bake the vegetarian enchiladas in 180 ° C hot air for 15-20 minutes, and top with freshly chopped parsley before serving.
