Ingredients
2 tins of chickpeas
2 onions
4 carrots
1 squash
2 tsp cumin
2 tsp dried coriander
1 cinnamon stick
Salt and pepper
Slightly dried or fresh chilli
1 bag of spinach
900ml water
2 chicken or vegetable stock cubes
Lemon to taste
400ml Fazer Willja Oat Rice
Instructions
Cook Fazer Willja Oat Rice in a saucepan according to the instructions on the package.
Fry onions in a deep pan. Add the spices and carrots. Rinse the chickpeas. Let the chickpeas drain and add them to the pan along with the carrots. Add stock and water and bring to a boil.
When the carrots are tender, add the squash. Let it boil for 3-4 minutes. Add the spinach and let it cook for a few more minutes.
Place the oat rice in a bowl and add the chickpea casserole. Serve with lemon zest for added zing.
