Butternut Squash Cupcakes
Fazer Willja Cooking Fraiche Natural can also be used in sweet baking! These seasonal cupcakes contain butternut squash, warming spices, and of course Fazer Willja Cooking Fraiche to make them lush and delicious.
Ingredients
- 200 g grated butternut squash
- 4 dl all-purpose flour
- 2 dl brown sugar
- 1 dl sugar
- 1,5 tsp baking powder
- 0,5 tsp baking soda
- 2 tsp Ceylon cinnamon
- 1 tsp ground cardamom
- ½ tsp ground ginger
- ¼ tsp ground cloves
- 0,5 tsp salt
- 1 package Fazer Willja Cooking Fraiche Natural
- 1,5 dl oat drink
- 50 g melted vegan butter or oil
Frosting:
- Fazer Willja Oat for Whipping sweetened with vanilla sugar to taste
OR
- 100 g soft vegan butter
- 0,5 dl Fazer Willja Cooking Fraiche Natural
- 1,5 dl powdered sugar
- 1 tsp Ceylon cinnamon
Instructions
- Preheat the oven to 180 C and line a 12 cupcake pan with cupcake forms.
- In a bowl, mix the flour, sugars, baking powder, baking soda, spices and salt. Add the grated butternut squash, Fazer Willja Cooking Fraiche, melted vegan butter or oil. Combine gently until smooth, but don’t overmix the batter.
- Spoon the batter into the cupcake molds, about ¾ full. Bake in the oven for 20-25 minutes or until the toothpick test comes out clean.
- Let the cupcakes cool in the pan before removing them to a rack. Add frosting when they are fully cooled.
- Whip the Fazer Willja Oat for Whipping and add vanilla sugar as a sweetener or whisk the soft butter with Fazer Willja Cooking Fraiche, powdered sugar and cinnamon. Pipe on top of the cupcakes.
